Roasted Potatoes With Peppers & Onions

Ingredients

 4 cups red potatoes, quartered
 1 pepper (colour of your choice), thinly sliced
 ½ red onion, thinly sliced
 salt to taste

Preheat oven to 350 degrees.

Toss potatoes in Cindy’s Chipotle Olive Oil and sprinkle with salt. Roast on a rimmed sheet pan approximately 25-30 minutes or until browned.

Slowly heat the 25 Star Dark Balsamic in a large skillet. Add peppers and onions to pan and stir until caramelized (just a few minutes, or longer if you like your veggies a bit more cooked – you might have to add a bit more balsamic if you cook them longer).

Add peppers and onions to the potatoes, then sprinkle with salt and serve.
