Pico de Gallo

 2 cups Roma tomatoes, seeded & diced (8)
 ¾ cup white onion, diced (1)
 2 tbsp jalapeno, mined (1)
 ½ cup cilantro, chopped
 juice & zest of 2 limes
 2 tbsp Cindy's Oregano Olive Oil
 salt & pepper to taste

Combine all ingredients in a bowl and mix with a spoon until combined. Taste and adjust seasoning with salt and pepper.
